Grilled Spicy Shrimp Guacamole

Spicy Grilled Shrimp
Instructions

Prep veggies & herbs - set to the side

Slice Avocados in halves, remove the pit and skin; add to a medium-sized bowl and mash

In a separate small container, add and mix seasonings

Rinse Shrimp in cold water, place in a bowl

Combine seasoning mixture to Shrimp and toss until well covered

Coat Grill Pan with Olive Oil and heat pan on medium-high heat

Once Olive Oil is hot, add shrimp; sear on each side for 2-3 minutes

Remove Shrimp - set to the side to cool

Fold veggies & herbs into mashed avocados, save a little of each for topping

Squeeze Lemon & Lime juice on mashed avocados and add Salt and Pepper to taste; don't forget to mix

Chop Shrimp in medium pieces; fold into Guac

Top with extra toppings
