Easy Scotch Eggs

My two brothers and I use to always look forward to eating scotch eggs as kids. My mom and Grandma used to make these on special occasions or around the holidays when I was growing up. Scotch eggs are a perfect holiday breakfast treat. Whip them up for breakfast after you and the family open up gifts on Christmas morning. I mean, who doesn’t love a boiled egg wrapped in delicious breakfast sausage and then fried.

This recipe includes eggs, breakfast sausage, flour, and breadcrumbs. I personally prefer the Tennessee Pride hot breakfast sausage. Boil your eggs first for 10 minutes, once finish transfer immediately to an ice bath. While eggs are resting in the ice bath, prepare your sausage mixture. Then, peel the shell off the eggs and set to the side. Lightly dust egg in flour, grab a handful of sausage mixture, mash it into a patty in your hand, and then wrap it around the boiled egg. After that step is complete, coat the sausage wrapped boiled egg in beaten egg, breadcrumbs, and set to the side. Fry the scotch eggs in 3 to 4 inches of canola or vegetable oil on each side for about 4 to 5 minutes or until golden brown. If needed, you can pop them in the oven on 350 for 5 minutes afterward. 

Technique

Wrapping the sausage around the egg – grab a handful of sausage, mash it into a patty, put the boiled egg into the sausage patty, and then roll and gently massage the sausage around the egg until the egg is fully covered. Add or remove sausage as needed. Review Youtube video tutorial for more help.

Tips

You could fry the scotch eggs with or without breadcrumbs. This recipe includes breadcrumbs, but they can easily be left out. Both ways taste really good. 

You can also bake scotch eggs as well. I recommend searing it on the stove in about 1 inch of oil first for 1-2 minutes on each side to brown and then popping them in the oven on 400 for about 30 minutes. I like my scotch eggs fried the best.

  1. Boil 5 Eggs in a medium-sized pot for  10 minutes. Make sure water is boiling before you add eggs. 

  2. While Eggs are boiling,  prep breakfast sausage.  Add sausage and seasonings to a mixing bowl and mix well.  Set in the refrigerator.  (Tip: it's easier to manage the ground sausage when it's cold)

  3. Prep smaller mixing bowls with flour, breadcrumbs (Optional), and 2 beaten eggs. 

  4. Once Eggs are finished boiling, submerge them into an ice bath and let cool for about 3-5 minutes and then peel eggs and set to the side. 

  5. Heat 3-4 inches Canola/Vegetable oil on medium-high heat in a large skillet.  Drop a tiny amount of water in oil, if it sizzles, it's ready. If you prefer to Bake the Scotch Eggs preheat oven to 400 degrees. I prefer fried.  

  6. Lightly dust one cooled boiled egg in flour, grab a small handful of sausage, and mash into a patty in your hand. Add egg to sausage and mold it around the egg. Add more sausage if needed. Roll in egg batter, breadcrumbs (optional), and then sat to the side. Repeat on remaining boiled eggs. 

  7. Fry Scotch Eggs on each side for 4-5 minutes or until golden brown.  You can place them in the oven on 350 for 5 minutes afterward if needed. 

    If you would like to bake the scotch eggs solely,  preheat the oven to 400 and bake for about 30 minutes.  

  8. Once cooled, slice in half, and garnish with green onions. Enjoy
