My Aunt made a Chicken Pot Pie for Hubby and me a couple of weeks ago. It was so good! I thought to myself, I want to create a similar recipe but with Turkey instead. I thought that would be perfect for the holidays – a way to reuse your Thanksgiving turkey.
This recipe is also good on a regular day. I provide you with a way to make this with uncooked turkey as well. You have to boil Turkey in water, vegetables, herbs, and spices. It’s perfect to eat on a cold day or when you have a couple of hungry mouths to feed.
This Turkey Pot Pie is Savory and fairly easy to make. The Pot Pie’s creamy filling is made with heavy whipping cream, vegetables, herbs, and spices. You absolutely won’t regret making this for you and your family.

Turkey Pot Pie
Ingredients
Using Uncooked Turkey
Using Pre Cooked Turkey or Left over Thanksgiving Turkey
Instructions

Using Uncooked Turkey Drumsticks
Add water, Turkey Drumsticks, carrots, 1/2 cup yellow onion, celery, garlic, salt & pepper to a pot. Bring to a boil and reduce to simmer. Let cook for 30-40 minutes. Allow to cool, remove Turkey from water into a bowl and shred with two forks

Using Pre cooked Turkey
Shred 1 lb of precooked turkey

Pot Pie Crust
If crust is frozen, allow to sit at room temperature for 60 to 90 minutes.

Pre Heat Oven to 450. Gently unroll pie crust. Place crust in a 9-inch ungreased pan ( glass pan recommended). Bake bottom crust in oven for 7-8 minutes. While baking, prep filling.

Pot Pie Filling
In a medium saucepan melt butter on medium-low heat. Once butter is melted add onions, thyme, salt, pepper, garlic powder, and heavy whipping cream. Stir for about 30 seconds.

Next, add turkey gravy mix and stir. Then add Golden onion soup mix and whisk all together until sauce base begins to thicken. Whisk for about 30 seconds

Mix in 1 - 1 1/2 cup of frozen vegetables to the sauce base and then fold in shredded turkey. Allow filling to cook on simmer for about 3 minutes.

Once complete, add filling to baked pie crust. Fold 2nd pie crust over top. Remove excess crust. Press crust together to form thick edges. Use a fork to design edges and cut slits in top crust.

Lightly brush the top of pie crust with heavy whipping cream. Bake on 450 for another 10-15 minutes. Check on Pie crust to make sure it doesn't burn. Remove once crust is golden brown. Allow to cool for 10-15 minutes and enjoy!
