This soup is packed with various fresh vegetables and herbs, including onions, bell pepper, basil, and garlic. This vegetable mix works wonders with the Ground Turkey and soup base to make a warm, comforting, cheesy, and flavorful soup that everybody, even the kids, will enjoy.

  • Canned Crushed Tomatoes
  • Beef Broth
  • Grated or Shredded Parmesan Cheese
  • Lipton Beefy Soup Mix
  • Cooking Oil

Vegetables

  • Yellow Onions
  • Green Bell Pepper
  • Spinach

Fresh Herbs

  • Garlic
  • Basil ( Optional)
  • Thyme

Seasonings

  • Salt
  • Black Pepper
  • Red Pepper Flakes
  • Italian Seasoning Blend

Cooking Equipment

The equipment you need to make this amazing Ravioli Soup is simple. Grab a Soup Pot, Sharp Cutting Knife, Cutting Board, and a Spatula. Preferably wooden as wooden utensils are great for maintaining the quality of your pots and pans.

Tips, Tricks, and Substitutions

Fresh Ravioli instead of Frozen – You can substitute Frozen Ravioli for Fresh Ravioli. Add Fresh Ravioli into Soup Mix 5 minutes before it finishes to ensure it cooks and doesn’t get mushy.

Vegetarian Option – Substitute Ground Turkey for chopped or ground mushrooms.

Vegan Option – Substitute Cheese Ravioli and Ground Turkey for Vegan Ravioli and Mushrooms

Meal Prep – This is a perfect meal prep dish. It can stay in the refrigerator for 5 days.

Storing -Store in an airtight container in the refrigerator for 5 days.

Instructions

  1. Prep ingredients 

  2. Add cooking oil to a large pot on medium heat. Allow oil to heat for 30 seconds

    Then add onions, bell pepper, garlic, and a dash of salt pepper to the pot. 

    Cook veggies for 1-2 minutes 

  3. Crumble uncooked Ground Turkey into the pot with veggies.

    Add seasonings including the Lipton Beefy Soup Mix to Ground Turkey. 

    With a spatula, continue to gently chop up your Ground Turkey and mix in your seasoning.

    Cook meat for 7-10 until ground turkey is browned.  

  4. Add Spinach to Ground Turkey and cook for about 30 seconds 

  5. Add crushed tomatoes and beef broth to the Pot.

    Mix together and cook for 5 minutes.  

  6. Next, add basil, thyme, and remaining seasonings.

    Stir it into the pot and cook for another 2 minutes. 

  7. Add frozen cheese ravioli into the Pot.

    Let boil for an additional 5 minutes or until softened 

  8. Lastly,  Mix in a handful or two of Parmesan Cheese to Soup.  

    Cook for 15 minutes on low heat, stirring occasionally.  

     

  9. Once finished, taste soup, and add additional Italian Seasoning and salt to taste if needed.  Enjoy :-)
