How to Make Chimichurri

This recipe is super simple full of fresh herbs and spices. It elevates any meal!

I started making Chimichurri sauce last year. Before, I thought it was hard to make, but then I learned how to make Chimichurri sauce and realized it was super simple. You can drizzle it over steak, fish, grilled or baked chicken, roasted potatoes, salad, I mean the options are limitless. It just elevates any meal!

Wha’ts in it?

Chimichurri sauce is an Argentina sauce. It can be used as both a sauce or a condiment. I like to use it as both because it’s that darn good! There are a few variations, but the base is the same. The base is Extra Virgin Olive Oil, Red Wine Vinegar, Cilantro, Parsley, fresh garlic, oregano, red jalapenos or chili peppers, and shallots or green onions.

How to Make Chimichurri?

How do you make Chimichurri sauce? Like I wrote earlier, it’s super easy to make. The first step, wash all your herbs and vegetables. You want to make sure you remove all the grit and residue. Next, roughly chop everything up and it to a chopper or blender. Anything that will both chop and mix it all together. Make sure not to blend or chop it too finely. You want some texture in this sauce. Then, add the extra virgin olive oil and red wine vinegar into the mix. Toss it all together, add salt and pepper to taste, and you’re done. It’s that simple!

Tips, Tricks, and Substitutions

A few things! It is not necessary to blend the ingredients together. A rough chop is more then enough if you want your sauce more texture. It’s always hard for me to find red jalapeno or chili peppers, so if your in a similar situation, you can substitute the red peppers for red chili flakes. Add as much or little as you want. You can also substitute fresh oregano with dried oregano as well. I prefer using green onions over shallots because green onions are way more affordable and easier to find.

As stated above, you can pair this as a sauce or condiment with pretty much any meat cooked in various ways. I love it best drizzled over a grilled steak, baked chicken, and fish. You can also use this as a salad dressing. Drizzle it over vegetables, whatever you want. It’s so delicious!

  1. Prep & roughly chopped ingredients 

  2. Add all ingredients to a bowl or blender and mix well.  

    If you want more texture don't blend, for a smoother texture, blend the ingredients together. The longer you blend the smoother it will become.

  1. Add salt and pepper to taste, garnish with red pepper, allow to sit for 30 minutes, and serve chilled or at room temperature.
