What is a Quesadilla? Y’all, this might be crazy for me to admit, but I thought Quesadillas originated here in the States. Welp, I was wrong! Quesadillas originated in Mexico! They are large tortillas, loaded with cheese and other toppings, folded in half and then grilled or fried. I enjoy Quesadillas for their versatility. You can make them in a bunch of different ways depending on your mood. You can make Chicken Quesadillas, Steak Quesadillas, and Vegetables Quesadillas, among other more creative ideas. This Salmon Quesadilla with Spicy Avocado Sauce recipe is super simple to make at home. The flavors are incredible together. You will taste the salmon’s subtle sweet flavor, a little spice from the red onion, and the creamy and salty flavor profile of mozzarella cheese. This Quesadilla would not be complete without the spicy and zesty flavor of the Avocado sauce. Trust me, you are going to absolutely love this recipe.

How Did I Cone Up with this Recipe?

I host a live cooking show every other Tuesday via my Instagram page called the Lunch Break Live. On the Lunch Break, I show my community how to make fun and creative dishes. In the lead-up to this specific show, I didn’t feel like going to the grocery store and wanted to make something out of the few things I had on hand. I love how versatile Salmon is, and my love for Mexican food never fails me, so that was that – Salmon Quesadillas. I presented the idea to my husband to see what he thought, and he was just as excited. He’s a big sauce kind of guy and asked if I would add some sauce to it. I wasn’t thinking of sauce at the time, but thought, hmmm, creating a sauce for this would be bomb, and that’s how the Spicy Avocado sauce came to life as well.

  • Salmon Quesadillas
    • Fresh or Frozen Salmon
    • Red Onions
    • Shredded Mozzarella Cheese
    • Large Flour Tortillas
    • Old Bay Seasoning
    • Garlic Powder
    • Onion Powder
    • Unslated Butter
    • Olive Oil
  • Spicy Avocado Sauce
    • Ripe Avocado
    • Fresh Lemon Juice
    • Hot Sauce
    • Cilantro
    • Garlic
    • Taco Seasoning Packet
    • Olive Oil
    • Salt & Pepper to taste
    • Water

What Cooking Equipment Do You Need?

Non-Stick Skillet – I prefer my Cast Iron Skillet. I just love cooking in a Cast Iron Skillet!

Spatula – Wooden Spatulas helps to preserve your skillet.

Blender – an immersion blender really helps to smooth the Spicy Avocado Sauce together, but a regular blender will work as well.

Tips, Tricks, and Substitutions

Fresh or Frozen Salmon – You can use either fresh or frozen Salmon

Add-Ons – You can add any vegetables to this quesadilla you want. Mushrooms, Spinach, tomatoes, etc. I also recommend topping your Quesadilla with fresh Pico De Gallo, it really adds to the flavor profile of the dish as well.

Meal Prep – This is a perfect meal prep dish. It can stay in the refrigerator for 3-4 days.

Storing -Store in an airtight container in the refrigerator.

This Salmon Quesadilla with Spicy Avocado Sauce recipe is super simple to make at home. The flavors are incredible together. You will taste the salmon's subtle sweet flavor, a little spice from the red onion, and the creamy and salty flavor profile of mozzarella cheese. This Quesadilla would not be complete without the spicy and zesty flavor of the Avocado sauce. Trust me, you are going to absolutely love this recipe.

Ingredients

Spicy Guacamole Sauce

Salmon

  1. Prep Ingredients.  Add seasonings to a bowl and mix well. Remove access water from Salmon by patting dry with paper towel.  

  2. Season salmon on both sides with seasoning mix 

  3. Add 1 TBSP of Olive Oil to a large non-stick skillet on Medium-High Heat.  Once Olive oil begins to shimmer, it's ready.  Add Salmon to skillet and cook on one side for 3-4 minutes depending on thickness.  Next, flip Salmon on the opposite side, reduce heat to medium-low heat and cook for an additional 3 minutes. Turn heat off and remove salmon and allow to cool for 1 minute or so

  4. With a fork, smash salmon into small pieces and prep quesadilla ingredients. 

  5. In the same skillet, melt 1 tbsp of butter in the leftover brown bits

  6. Coat 1 large flour tortilla in melted butter on both sides, and then lay flat on one side in skillet

  7. Add cheese, red onions, and more cheese to half of the tortilla shell

  8. Fold the tortilla in half and flip over to sear on other side until browned

  9. Repeat steps 7-10 until all quesadillas are cooked

Spicy Avocado Sauce

  1. Add all the ingredients together ad blend with a blender or an immersion blender until smooth

  2. Drizzle on top of Salmon Quesadillas and Enjoy.
