Salmon Bowl

I’ve been feeling all out of whack lately! I have so many things going on that I haven’t had the time to work on a recipe in awhile. I’m planning my wedding celebration that’s happening next month and in the process of buying a house. I mean things are crazy! But, y’all know how much I enjoy making recipes right? So, I made time, and thought what’s something good that we can eat together, that’s fitting for this time in my life. I need a recipe that’s both comforting and easy on the hips because you know, I gots to fit into my wedding dress, lol. It took some time, but then, I got it and it was perfect. This Salmon Bowl recipe is pretty darn amazing! Its fun to eat and doesn’t lack in flavor.

What is a Salmon Bowl?

A Salmon Bowl is the perfect keep that body tight dish while still adding some level of comfort. The base is loaded with Yellow rice, that’s the comforting part. Then you topped it with fresh vegetables, mozzarella cheese, and perfectly season baked salmon, the keep that body right part. What makes this bowl different, it’s topped with Italian dressing and you can add bacon for extra pizazz if you’d like.

Recipe Inspiration

Most of you know I live in Atlanta, but what you may not know is how I got here. My Husband is a Morehouse man and stayed in Atlanta after graduating college. When him I started dating I was living in Chicago at the time, well, anyways, I eventually moved here. One his favorite restaurants was Mr. Everything and they have these amazing bowls that you can get similar toppings on. It’s sooo good! The location closest to us closed down and I decided to make my won rendition at home, so here we are.

Recipe Substitutions

The most obvious substitution is removing the bacon. It’s not necessary, but does add some amazing flavor. Secondly, if you want to just buy yellow rice instead of making it from scratch you can do that as well. Substitute the vegetables for whatever your heart desires, but the current combination is freaking amazing.

Can you meal Prep?

Yes, this would be perfect for meal prep. I’d recommend keeping everything stored separately in an air tight container and making your bowl when your ready to eat. Store in refrigerator for 3-4 days.

This Salmon Bowl is loaded with Yellow rice, topped with fresh vegetables, mozzarella cheese, baked salmon, and topped with Italian dressing.

Instructions

  1. Preheat oven to 400 degrees and prep vegetables

  2. Heat 3 tablespoons of butter in a medium pot. Add rice and stir until rice begins to brown.

    Add garlic, dried minced onions, turmeric, and stir. Slowly stir in chicken broth and raise heat to medium-high. Add salt and pepper to taste. Bring Rice mix to a boil, then reduce heat to low and cover with a lid. Simmer for 20-25 minutes and remove from heat and fluff with a fork. Tip: Set timer, so you don’t forget to check on the rice. 

  3. While rice is simmering, line baking pan with Aluminum Foil (makes for easy cleanup).  In a small bowl mix garlic powder, sea salt, dried parsley, Black Pepper, Season All season salt, lemon pepper, and ground ginger, set aside.

  4. Pat Salmon dry with paper towel and rub front and back sides with a dime size of olive oil.  Season salmon with seasoning mix until well covered and add a little lemon zest.

  5. Bake for 15-25 minutes depending on thickness and preferred taste. 3-4 minutes before finished, remove pan from oven, add two slices of butter to each piece, and return to the oven.

  6. While salmon is baking, add olive oil, garlic, salt, and black pepper to a large skillet over medium heat. Coat the entire pan with the mixture for 1 minute.  Add yellow and red onions, mushrooms, and broccoli to skillet; sear for about 7 minutes, mixing occasionally.  Once veggies are tender, remove from heat; add tomatoes and dried parsley and cover with lid.

  7. Load your bowl with fully cooked yellow rice, veggies, salmon, and mozzarella cheese.  Add a little bacon (Optional) to spice it up, drizzle with Italian dressing, and lemon juice.
