Jerk Chicken Lettuce Wraps

Jerk Chicken Lettuce Wraps are perfect for any season, but especially Spring and Summer. It’s super light and packed with tons of flavor. The Jerk Sauce gives the shredded Chicken a kick, and the cheddar cheese helps to tone the spice down a bit. If you are on a healthy eating journey or just looking to eat something lighter for the day, these Jerk Chicken Lettuce wraps are perfect.

Meal Prep and Substitutions

These Jerk Chicken Lettuce Wraps are perfect for Meal Prep. I recommend building the wraps on demand, but you can prep and store all your ingredients in separate airtight containers in the refrigerator for 4-5 days.

If you are not a tomato fan, you can substitute tomatoes for avocado. Instead of boiling your own chicken, you can buy a Rotisserie Chicken and shred it. This will save you 45 minutes of cook time.

Recommendations

Add a little bit of the Jerk Sauce at a time to your Shredded Chicken to make sure it isn’t too spicy. Dilute with a little water if needed to reduce the spice level.

Shredded Chicken

  1. Add water, onion, garlic, and chicken to a Medium-sized Pot.  Bring water to a boil, reduce heat to low, and cover.   Cook for 45 minutes or until tender.  Remove from pot, add about 1/2 cup of leftover broth, and shred chicken with two forks. 

  2. Prep and wash Veggies while the Chicken is boiling. Separate the Lettuce and select the pieces that will be best for the kind of lettuce wrap you want.  

  3. Add 1 tbsp of olive oil to a Medium-Sized Skillet on Medium heat.  Once the olive oil is hot, add shredded chicken, and mix in seasonings. Cook for about 3-5 minutes.  

  4. Prepare Sauce! Add all ingredients to a small pot on low heat, mix well, and let cook for 3-5 minutes. Add sauce to skillet with Shredded Chicken.  A little at a time. Taste as you go to ensure you get the desired taste you want. 

  5. Build Lettuce wrap.  Add chicken, cheese, veggies and repeat.  Enjoy
