How to Make Yummy Chicken Taquitos

Taquitos filled with seasoned chicken and Mexican blend shredded cheese.  You can whip these up for any occasion and it’s the perfect appetizer to eat while watching your favorite sports game. Pair it with Guacamole, Pico de Gallo, Sour Cream, Salsa, Queso, rice, cilantro, etc! The recipe makes about 15 Taquitos.

Ingredients
  • 3 Skinless Chicken Thighs
  • 15 Yellow Corn Tortillas (Standard Size)
  • Chicken Broth
  • 8 oz bag Shredded Taco Nacho cheese, Mexican blend, or Mild cheddar
  • 1 tbsp Tomato Sauce (Optional)
  • 1/2 tbsp Whipping Cream
  • 1/2 tsp Chili Powder seasoning
  • 1/2 tsp Adobo seasoning
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 lime (Squeezed)
  • Canola Oil
Instructions
  1. Line plate or baking pan with paper towels; set to the side
  2. Boil chicken thighs in broth in a medium pot over medium-high heat; season with salt and pepper.
  3. Cover with lid and reduce heat to medium and cook for 10-15 minutes
  4. Remove chicken from pot into bowl; add a little broth, and let rest for 5 minute
  5. Shred chicken with two forks
  6. Add Chili Powder seasoning, Adobo seasoning, Garlic Powder, Onion Powder, Sea Salt, Black Pepper, lime juice, whipping cream, tomato sauce (optional), and shredded cheese; mix well and shred chicken more
  7. Wrap tortilla shells in a damp paper towel and warm shells in microwave for 30 seconds; a few at a time
  8. Heat 2 inches of Canola Oil in a large skillet on medium-high heat; until oil sizzles
  9. While oil is heating, Prep Taquitos
  10. On a flat surface, add a tbsp of shredded chicken to the edge of tortilla shell; press together until shredded chicken is in 1 thin line
  11. Take the end of the shell the chicken is closest to and begin to roll chicken inside of shell; add toothpick to hold shell together and use tongs to put it in the hot oil
  12. Start rolling the 2nd Taquito, add to oil, and flip the 1st taquito over to the other side
  13. Remove taquitos from oil once golden brown on
