Catfish Po Boy w/ Cajun Remoulade Sauce

Is it just me! Am I the only one that feels like the 1st quarter of this year was full of fish sandwiches? From Popeyes to Burger King, it seemed like everybody was creating their own version. So y'all know I had to join the club. Let me introduce you to the most amazing fish sandwich you'll ever have - my infamous Catfish Po Boy Sandwich.

What is a Po Boy Sandwich?

The Po boy derived from Louisiana. It was used to feed hungry strikers back in the day. It's the perfect meal for a hungry striker because it's a large piece of meat loaded in a piece of bread. There are a few variations, and my favorites are Fried Shrimp and Fried Catfish Po Boy.

Why is this Catfish Po Boy so good?

This Catfish Po Boy Sandwich is so good! It's a golden brown, crispy, and well seasoned Catfish Fillet wedged between a hoagie roll. I typically use Hoagie rolls because they are easy to find in Atlanta. However, the New Orleans style French roll is the traditional bread used on this sandwich.

What really makes this Po Boy AMAZING is the Cajun Remoulade sauce that you add to it. The sauce is made of Mayo, Lemon Juice, Hot Sauce, Fresh Garlic, and some seasonings. The Cajun Remoulade sauce pairs so well with the Catfish and other toppings, and really is what makes this recipe stand out. Once you have the base of your Po Boy prepped, you can top it with Tomatoes, Red Onions, Pickles, and Parsley. I love how fresh the Parsley makes the sandwich, but if you don't like Parsley then shredded lettuce will be just as good.

What can you pair it with?

This Catfish Po Boy is so versatile it pairs well with a bunch of things. I recommend French Fries, or steamed vegetables. If you want to elevate the dish and make it a real New Orleans style meal, you can pair it with a bowl of Gumbo. My Mouth just watered thinking about how good this Catfish Po Boy is with Gumbo.

Ingredients
    Catfish
  • 4 Pieces of Catfish Fillets
  • 1/4 tsp Sea Salt
  • 1 tsp Morton's Season All Seasoning Sallt (add half to Cornmeal & Flour Mixture)
  • 1 tsp Dried Parsley
  • 1 tbsp Garlic Powder (add half to Cornmeal & Flour Mixture)
  • 1 tsp Lemon Pepper
  • 1 tsp Curry Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Cayenne Pepper
  • 1 cup Yellow Cornmeal
  • 1/4 cup Flour
  • Frying Oil
  • Creole Remoulade Sauce
  • 1/2 cup Mayo
  • 1 tbsp Lemon Juice
  • 1 tsp Hot Sauce
  • 1/4 tsp Fresh Parsley
  • 1 clove Fresh Garlic
  • 1 tsp Creole Seasoning
  • 1 tsp Paprika
  • Dash of Salt and Pepper
  • Po Boy Toppings
  • 4 Hoagie Rolls or 2 loaves New Orleans French Bread
  • 2 Medium Sized Tomatoes (Sliced)
  • Kosher Pickles (Slices)
  • Red Onions (Sliced)
  • Fresh Parsley or Shredded Lettuce (Roughly Chopped)
Instructions
  1. Prep Sandwich Toppings

    Add Creole Remoulade Sauce together in a small bowl.  Mix ingredients together and ensure the taste is to your liking.  Set to the side. 

  2. Rinse Fish in Cold Water and in a separate bowl add and mix seasonings together. In another bowl add and mix Yellow Cornmeal, Flour, seasoning all, and garlic powder together 

  3. Heat 2-3 inches of Canola Oil ina frying pan to about 360 degrees or on Medium-High Heat.  Test oil with a pinch of water, if it sizzles, the oil is ready.  

  4. While oil is heating, load Catfish into a Gallon Size plastic bag.  Add the seasoning mixture to the bag.  Shake and massage the seasoning into the fish until each piece is covered 

  5. Cover the Catfish Fillets in the Cornmeal Mixture.  Once oil is hot enough fry on each side for 3-4 minutes or until Golden Brown                 (uncovered).  Once done, add fish to a plate lined with a paper towel.  The paper towel will help drain the access oil.  

  6. Prep Sandwiches:  On each Hoagie, add a layer of the Remoulade Sauce, 1 Catfish Fillet, tomato slices, pickles, red Onion, Parsley or Shredded lettuce, more Remoulade sauce.
