Black Plum Summer Salad w/ Sweet Onion Dressing

It was the middle of July, I was shopping at my local grocery store and found the sweetest black plums.  I thought to myself, I wonder what I can drum up with these.

A few weeks before, I did a segment on Instagram about plums because they were in season.  I found from my research that plums are considered “healthy foods.” What does that mean exactly, Plums are rich in calcium, fiber, and antioxidants.

My creative juices started flowing and I wanted to make something that was both healthy that anybody could eat, but full of flavor and that’s how this salad came out.

Black Plum Summer Salad is super light and refreshing.  Packed with walnuts, ginger, and basil, with a Sweet Onion Ginger Dressing.  The best way to eat this is sitting outside on a warm day.

Ingredients

Sweet Onion Dressing

Instructions

  1. Caramelize diced Yellow Onion in 3 TBSP of olive oil over medium heat and cover with lid
  2. Once Yellow Onions begin to lightly brown, add grated ginger (cook slowly, occasionally stirring until onions are nice and brown)
  3. Add Caramelized Onions and remaining glaze from skillet to a wide mouth bottle or container
  4. In the same bottle or container add remaining dressing ingredients
  5. Shake or stir together before use
  6. In a large bowl combine all salad ingredients and toss
